Ingredients
Serves 4
- 2 balls of fresh burrata
- 500g heritage tomatoes, sliced
- 200g cherry tomatoes, halved
- 1 small shallot, finely sliced
- Handful of fresh basil leaves
- 3 tbsp premium extra virgin olive oil
- 1 tbsp aged balsamic vinegar (optional)
- Sea salt
- Freshly cracked black pepper
Method
1. Prepare the tomatoes
Arrange the sliced heritage tomatoes and cherry tomatoes on a large serving platter. Scatter over the finely sliced shallot.
2. Add the burrata
Place the burrata in the centre of the platter and gently tear it open so the creamy interior begins to spread across the tomatoes.
3. Season
Sprinkle generously with flaky sea salt and freshly cracked black pepper.
4. Finish with olive oil
Drizzle the extra virgin olive oil evenly over the tomatoes and burrata. Add a little aged balsamic vinegar if desired.
5. Garnish
Scatter fresh basil leaves across the salad and serve immediately with warm crusty sourdough bread.
